Ingredients

6 Del Real Foods Chicken in Red Sauce Tamales
8 large eggs
1 cup Mexican crema
1 cup shredded Monterey Jack cheese
½ cup Del Real Foods Fire Roasted Salsa Roja
¼ cup cilantro, chopped
½ cup pico de gallo
¼ cup crumbled cotija cheese

Instructions

1.

Preheat the oven to 375°F. Prepare the Del Real Foods Chicken In Red Sauce Tamales according to package instructions. Remove the wrappers and cut the tamales into thick slices.

2.

Lightly grease a 9x13-inch baking dish. Arrange half of the tamale slices in an even layer across the bottom of the dish.

Whisk together the eggs and mexican crema. Pour half of the egg mixture evenly over the tamales, then sprinkle with half of the monterey Jack cheese.

Add the remaining tamale slices in an even layer. Pour the remaining egg mixture over the top and finish with the remaining monterey Jack cheese.

5.

Bake for 30–35 minutes, or until the eggs are fully set and the cheese is melted and lightly golden.

6.

Top with chopped cilantro, pico de gallo, and crumbled cotija cheese. Serve warm with Del Real Foods Fire Roasted Salsa Roja on the side
