Queso Fundido with Birria

Queso fundido is melted cheese, and that's most of the appeal. Spread birria across the bottom of a cast iron skillet, bury it under Oaxaca and Monterey Jack, and bake until the top blisters. Scoop it with chips or warm flour tortillas while it's still stretching.

Ingredients

  • 1 package Del Real Foods Birria, prepared according to package instructions.
  • 2 cups shredded Oaxaca cheese.
  • 1 cup shredded Monterey Jack cheese.
  • ½ cup Del Real Foods Fire Roasted Red Salsa.
  • 2 tablespoons chopped white onion.
  • 2 tablespoons chopped cilantro.
  • Tortilla chips, for serving.
  • Warm flour tortillas, for serving.

Instructions

Prepare the Del Real Foods Birria according to package instructions. Spread the birria evenly into a small cast iron skillet or oven-safe baking dish.

Top with the Oaxaca and Monterey Jack cheeses and bake at 400°F for 10–12 minutes, or until the cheese is melted and bubbling.

Spoon the Del Real Foods Fire Roasted Red Salsa over the queso fundido.
4.
Garnish with the chopped white onion and cilantro.
5.
Serve immediately with tortilla chips and warm flour tortillas for scooping.
