Birria de Res Plate

Served as a plate rather than a taco, birria keeps its consommé — the chile-deep broth the beef cooked in. Ladle the meat and the broth into bowls, add rice and warm corn tortillas, and let everyone build each bite themselves.

What is birria?

Birria is meat slow-cooked in a broth of dried chiles, garlic and spices until it shreds. It began in Jalisco as a goat dish and is now most often made with beef. The cooking liquid — the consommé — is served alongside for dipping, and is the reason birria tastes the way it does.
