Chipotle Honey Chicken Tacos

Chipotle and honey work because they pull in opposite directions — smoke and heat against something sweet. Warm the flour tortillas, fill them, then finish with crema to cool it down and lime to sharpen it back up. Twenty minutes, start to finish.

What is chipotle?

A chipotle is a jalapeño left to ripen red, then smoked and dried. The smoking is what changes it — the raw heat softens and a deep, almost woody flavor takes over. Paired with honey, that smoke reads as warmth rather than spice.
