Low-Carb Chicken Taco Lettuce Cups
Who knew tacos could be refreshing? Crispy, crunchy, fresh, and better for you: Try these oh-so-easy Del Real Foods Chicken Taco Lettuce Cups for dinner!
Ingredients
- 3 cups Del Real Foods Shredded Chicken
- 1 Tbsp olive oil
- 1/2 cup Del Real Foods Salsa de Molcajete Roja
- 1/4 cup diced yellow onion
- 1/4 cup diced tomato
- 1/4 tsp garlic powder
- 1/4 tsp cumin
- 1/4 tsp chili powder
- 1/2 tsp salt
- 12 Bibb or Butter Lettuce leaves
Toppings (optional):
- Cubed avocado
- Shredded cheddar cheese
- Sour cream
- Lime wedges
Instructions
Add olive oil to a large skillet. Heat over medium and add shredded chicken. Toss to warm through, then add garlic powder, cumin, chili, and salt. Stir to coat chicken. Add diced onion and Salsa de Molcajete, toss to combine. Remove from heat and add diced tomato. Allow to cool slightly before spooning into lettuce leaves, then top with avocado, cheese, sour cream and a squeeze of lime. Enjoy!
